Lo he usado LuaLaTeX Version 1.12.0y quiero que toda la display-mathfuente esté en STIXfuentes. Cómo lograrlo.

Como @UlrikeFischer ha señalado en un comentario, lualatex-mathno es adecuado para cargar fuentes. De hecho, si su distribución de TeX está razonablemente actualizada, no hay ninguna razón para cargarla lualatex-math.
Mencionas que quieres usar fuentes Stix para matemáticas. Stix es un clon de Times Roman, pero hace bastante tiempo que no se actualiza. En lugar de Stix, le sugiero que utilice XITS/XITS Math, Stix Two Text/Stix Two Matho el newtxtext/newtxmathpar.
Uno de los siguientes tres conjuntos de instrucciones debería funcionar para usted:
